You Will Need:
- a plate
- a square of baking paper (a little bigger than your flatbread)
- a flatbread/wrap
- hummus
- grated cheese
- bacon
- BBQ sauce
- egg - mine are tiny so I'm using two
- cherry tomato
- feta cheese, crumbled
Method:
- Fry your bacon, eggs and sliced cherry tomatoes.
- Assemble!
You can skip the baking paper step but I've found it invaluable in keeping errant drips of sauce and bacon grease in check. To wrap the paper around your breakfast just slide the food up so about half of it sticks over the top edge of the paper, then fold the paper's bottom edge up. Now take your sides and fold those underneath so you can sit it down without the whole thing falling to pieces.
Variations:
- instead of a fried egg, why not scramble them with some fresh parsley and marjoram
- cut your bacon into pieces for an easier time eating it!
- fry some spring onions with the tomatoes for an extra bit of flavour
